Swahili Coconut Chicken
Ingredients:
2 Onions chopped finely
2 Carrots peeled and grated
½ Green pepper chopped
4 cloves garlic crushed
3 tomatoes peeled and chopped
½ teas Mchuzi mix (or chicken stockcube)
1 pinch salt
1 cup coconut milk
½ tablespoon oil
1 Chicken breast
Method:
Fry onion, garlic and peppers together until tender
Add grated carrots stir in and fry until tender
Add chopped chicken breast and fry until dry
Stir until the mixture seems dry (moisture has evaporated)
Add tomatoes
Stir and cook with the lid on over a low heat until boiling. Stir until all ingredients are almost mashed.
Add the coconut milk and stock flavor and salt to taste
Mixture is like a chicken stew. Serve with Coconut Rice.
Coconut Rice
Ingredients:
3 cups of rice
1 cup coconut milk
Enough water to take the liquid level up to double the rice.
Method:
Put all ingredients into a saucepan on high until it boils. Turn down to low heat and cover with a lid. Continue to cook until tunnels appear in rice and rice is tender. Salt to taste.
